Capri Salad Recipe

A Capri Salad is one of my all-time favourite starters. It’s a flavorful & light way to start your meal. My Capri Salad recipe is ideal for holidays or dinner parties because it can be prepared in advance.


I love entertaining & hosting holidays, but I don’t love spending all of my time in the kitchen after our guests have arrived. I like to enjoy the holiday or party too! One trick I’ve found to help things run smoothly is to have the food prepped in advance.


This Capri Salad takes a little while to chop & prepare but once it’s stacked up, you can leave it for an hour on the counter before you grill it. Or, longer in the refrigerator. It’s easy to serve with a little side salad & fruit.

Capri Salad recipe

Ingredients:

2 Tomatoes on the vine per person.

Mozzarella cheese either sliced or grated.

Black olives.

Fresh basil leaves.

Equal parts balsamic vinegar & extra virgin olive oil.

Salt & pepper.

As you can see, I don’t have exact quantities of the ingredients. You don’t have to be super exact with this recipe. I buy a packet of basil, a jar of olives & enough tomatoes to suit the number of guests coming to dinner.

Method:

1.  Slice the tomatoes & olives, grate or slice the mozzarella cheese (if it’s not pre-grated) & chop the basil.

2.  Mix equal parts of balsamic vinegar & extra virgin olive oil, add some black pepper. Pour the mix into a dispenser or little jug.

3.  Stack your creations directly onto the grill pan. I line mine with aluminum foil for an easy clean up.  Be careful because they can easily tip over.

4.  Layer tomato, mozzarella cheese, olives & basil in a stack, finishing with a layer of cheese on top.

5.  Place the stacks under a preheated grill for 3-5 minutes, or long enough to melt the cheese.  I love a little brown color to the top of the cheese so I wait for that crispiness to form.

6.  Carefully plate the stacks.

7.  Drizzle the vinegar & oil mixture over the stacks & salad. I drizzle a small amount & leave the dispenser, salt & pepper on the table for guests to season them to their own tastes.

8.  Serve immediately.
